Traveling with Allergies? Disney is a Dream Come True!

I have family down in Florida and we  wanted to go and see them, plus we really needed a vacation.  So, we booked a Disney vacation.  If you are traveling with allergies, Disney is the place to go.  They are amazing!!!!!!  I really cannot say enough wonderful things about our experience with them.  You can eat at a sit down restaurant or even go to a quick service counter and they help you find food that is safe.

Do Parents Make Up Allergies In Children?

A year and a half ago I read an article written by a man named Joel Stein.  The article is titled, “Nut allergies — a Yuppie invention”  Basically, he stated that many parents are projecting allergies on their kids.  The article was very disturbing.  Here is a link if you are interested in reading it: http://articles.latimes.com/2009/jan/09/opinion/oe-stein9. Needless, to say he received many e-mails and letters from some very disturbed parents.  I was one of them.  I told him of the story of T’s first allergic reaction and how scary it was.  I also told him that I hope he never has to experience the fear of having a child with food allergies.  I really was just so upset that he wrote this article.

Egg Free Cupcakes

Today I wanted to share a link to a site that has a terrific recipe for chocolate cupcakes that are both egg and dairy free.  It can be found at allrecipes.com.  The name of the recipe is Eggless Chocolate Cake II.  When I make them I change the serving size to 16 and click calculate.  That will give you enough batter for 24 cupcakes.  The great thing about that site though is you can adjust the serving size.  That way you can make a few if you need them or you can make a lot too.  When making them you have to be sure to use the exact amounts of each ingredient otherwise it does effect the taste.

Causes of Hives?

Oh, how I wish I knew all of the causes of hives!  Just need to post another little vent here.  T was playing in his room today and somehow he had an allergic reaction to something.  He had a red swollen eye with little hives all around it.  This has happened before where he has had an allergic reaction like this to some unknown trigger, but never at home.  For the life of me I can’t figure out what caused it.

Allergies in school update!

So, this is the first chance I have had to give you an update on my food allergies in school problem with T’s school. I spoke to the Director of the school, and she would not help me at all. I asked her if it would be possible to cook chicken nuggets for the whole class since they had the means to do it for T. She informed me that it was tradition for the school to serve pizza on the last day and they could not switch to chicken nuggets. She then gave me the option to have T sit in the office while the other students ate the pizza.  I informed her that was not an option for us, and I would pick him up before the pizza was served.  She then actually had the nerve to ask me what I thought would happen in public school.  I then reminded her that allergies are included in the American Disability Act and that would not happen in public school.

Children’s Allergies And School!

So, I know I have taken a little over a week off from writing. I was very busy with the kids, and at night my brain just has not been functioning well enough to formulate good sentences. I swear with the birth of each child I lost more brain cells. Anyway, today I had an incident happen so I have plenty to say tonight.
